Asparagus (or Green Bean) Orange Salad


!±8± Asparagus (or Green Bean) Orange Salad

This is a delicious salad that can also be served as a vegetable dish. The asparagus add a nice fresh taste to this and just a little crunch. I sometimes cook my own candied walnuts, and they come out excellent! But I usually buy the candied walnuts I add to this salad...it makes the preparation process a lot easier.

You can also make this a green bean salad, if you like. However, every time I make this, I lean towards the Asparagus.

4 SERVINGS

- 1 pound asparagus or green beans, trimmed and cut into 1½" pieces
- 1 teaspoon olive oil
- 1/2 teaspoon salt

1. Pour 2" of water into a large saucepan and bring it to boil over high heat. Add these ingredients and cook them until the asparagus is tender crisp (1-2 minutes).

2. Drain the asparagus or green beans, rinse them well with cold water and pat them dry with paper towels.

Place them in a large bowl, cover and chill until ready to serve.

- 1/4 cup jarred Sweet Chili Sauce
- 2 tablespoons fresh lemon juice
- 2 teaspoons soy sauce
- 2 teaspoons sesame oil

3. For the dressing, mix the above together in a small bowl.

4. Just before serving, pour the dressing in the bowl with the asparagus or green beans and stir to coat evenly, and place on a serving plate.

- 1 orange, segmented
- 1/4 rounded cups chopped glazed walnuts (store-bought or cooked in butter, salt, and brown sugar)

5. Top the salad with the oranges and sprinkle with the nuts.

This is a beautiful and delicious salad that can accompany any type of meal. I am sure you will enjoy it.
